- 1 small red bell pepper, de-seeded, stemmed, and diced to a size of 3/4 inches (approximately 1/2 cup total).

- Cube the chicken and place it in a medium bowl. Add 2 tablespoons of oil, soy sauce, Shaoxing wine, white pepper, sugar, salt, and cornstarch. Mix all of these ingredients together completely. Place in the refrigerator for at least half an hour or up to a full day.
- To Make the Sauce: Place all of the sauce’s components into a small bowl and thoroughly blend using a whisk.
- Remove chicken from the refrigerator five minutes before beginning to cook it in a stir-fry dish. Two tablespoons’ worth of oil should be heated over high heat in a wok until it begins to smoke. After adding the chicken, use a spatula to spread it out so that all of the pieces are in direct contact with the wok. About one minute, during which time the chicken should not be moved, it should become gently browned on the bottom. Continue to simmer while tossing the mixture often for another three to four minutes, or until the chicken is fully cooked. Place the mixture in a basin and put it aside.
- To the wok, add another two tablespoons’ worth of oil, and cook it over high heat until it begins to smoke. Stir-frying the mushrooms for around two minutes until they start to lose their liquid is the next step. Add some salt to taste. Continue to stir-fry the ingredients until most of the liquid has been absorbed, which should take around 2 minutes. Place the mushrooms in a basin and put them to the side.
- To the wok, add two additional tablespoons of oil, and cook it over high heat until it begins to smoke. After adding the jicama, celery, and zucchini, continue to simmer while stirring for approximately three minutes, or until the jicama has become slightly browned.
- Add the red bell pepper, season with salt, and continue to simmer for approximately 2 minutes, or until the bell pepper is just beginning to get soft. Put the mushrooms back into the wok and continue cooking them for another minute while stirring constantly. Place the chicken back in the wok and give it a good swirl. After stirring the sauce, pour it into the pan. Keep swirling and heating until the sauce reaches the desired thickness, which should take approximately a minute.
- Put an end to the blaze. After adding three quarters of a cup of roasted cashews and giving the mixture a swirl, transfer the mixture to a serving platter. The remaining cashews should be sprinkled on top, and the dish should be served immediately with rice on the side.
