  1. Squid: Using a sharp knife, cut the hood lengthwise all the way to the tip of the squid, and then lay the opened squid out flat on the cutting board. Make a diamond pattern on the squid by first cutting it diagonally (don’t cut all the way through), then scoring it again perpendicular to the diagonal scoring to complete the design. Rectangular pieces measuring around 2.5 centimeters (1 inch) by 4 centimeters (112 inches) If you have access to more than two or three bunches of tentacles, you can divide them into smaller groups.
